The ultimate Spring Fling Coconut Cream Cake! This Easter treat  is a Soft cake topped with sweetened coconut and yogurt cream cheese frosting.

The ultimate Spring Fling Coconut Cream Cake!

The ultimate Spring Fling Coconut Cream Cake!

Grass Topping:
Mix 1 oz. of sweetened shredded coconut with 6-7 drops of chosen color in a zip lock bag, transfer to a paper plate to dry.

Frosting: Beat butter & strained yogurt, beat in powdered sugar 1 tbsp at a time, mix in extract, cover and place in refrigerator.
1 Cup of Strained Fat Free Plain Greek Yogurt (strained at least 24 hrs.)
¼ cup of Sugar Free Confectioner’s Powder, I use Lankato Monkfruit
¼ tsp of Vanilla Extract.
1 Tbsp of Lite Butter Spread, I use I Can’t Believe It’s Not Butter 30% Veggie Oil

Batter:
2 ½ cups of a High Protein Pancake Mix, I use Kodiak Buttermilk
2 tsp of Baking Powder
1 Cup of White Granulated Sweetener, always Lankato Monkfruit for me
¼ tsp of Salt
2 Eggs
1/2 cup of Fat Free Plain Greek Yogurt
3/4 cup of water
2 Tbsp of Melted Lite Butter Spread, I Can’t Believe It’s Not Butter 30% Oil
½ cup of unsweetened plain almond milk
¾ tsp of Vanilla Extract.
Preheat oven 325 degrees, line bottom of 1- 9″ round cake pan with parchment, grease with cooking spray.

Mix all dry ingredients in a large bowl. Whisk together all wet ingredients. Add wet to dry and mix until well combined and lump free. Pour into prepared pan.

Bake 35-40 minutes, or until inserted toothpick comes out clean. Remove from pan and let cool.

Once cake is cool to the touch, frost top, sprinkle with colored coconut then decorate with 5 Peanut M&M’s (optional)
Keep covered in refrigerator
