Stuffed Acorn Squash

Turns out, the recipe for Stuffed acorn squash: one of my all time favorite fall dishes, which just so happens to be vegan, is also very WW friendly! 😋 one point per serving!

These look SO good and tasty. I can eat these alone or as a side dish.

Ingredients

  • 2 acorn squash & de-seed.
  • Lightly coat avocado oil spray (0 pts) to coat.
  • Sprinkle dried thyme, and S&P
  • 1 Cup of wild rice per pkg. directions.
  • 1 small chopped onion,
  • 2 cloves of minced garlic,
  • 2 Cup diced mushrooms, &
  • 1 medium chopped bell pepper.
  • 1 can of cannellini beans,
  • 2 big handfuls of spinach (tonight I used dinosaur kale instead),
  • 1 tsp. thyme,
  • 2 tsp of crushed red chili flakes

Directions 

Cut in half lengthwise 2 acorn squash & de-seed. Lightly coat with oil, or use avocado oil spray (0 pts) to coat. Sprinkle dried thyme, and S&P on it & cook for 45 min.

Meanwhile, cook 1 C. of wild rice per pkg. directions.

Then, to make stuffing, cooked down 1 sm. chopped onion, 2 cloves of minced garlic, 2 C. diced mushrooms, & 1 med. chopped bell pepper.

Add to it 1 can of cannellini beans, 2 big handfuls of spinach (tonight I used dinosaur kale instead), 1 tsp. thyme, 2 tsp of crushed red chili flakes, and S&P. Wilt down greens, but then add the wild rice to it. Stuff your cooked squash half. 1 very well-stuffed squash half = 1 points ; is super tasty and filling! 😁

Honestly, there’s enough stuffing that it really could support cooking down one more halved squash, making it 6 servings instead of 4. If you do that, then it’d be just under even less points per serving!!! Woohoo!

I wish I could call this my own creation, because it is sooo delicious, but truth be told I always just doctor up this recipe a little. 😉

For instance, I like more crushed chili pepper flakes & I often use a blend of kale & spinach in mine. In the picture I posted, I used Thai black rice (because that’s what I had on had) & it worked just fine, but truthfully using all wild rice in it is the best!
