Tasty Tortilla Quiche Two weight watchers points for 1/4 pan.

Tasty Tortilla Quiche

Seven weight watchers points for the whole pan. It was really yummy! I’ll probably experiment with different vegetables next time.

This was an easy, successful, low point, satisfying recipe. I don’t like to cook, so I like that I can do all this and have four servings.

Ingredients

  • Four 1 WW point tortillas
  • olive oil spray
  • seven eggs
  • 3/4 cup of nonfat cottage cheese.
  • salt, pepper and a bit of garlic salt.
  • frozen peppers and onions
  • fistful of fresh spinach
    chopped
  • 1 and 1/4 cup, of nonfat, shredded, Kraft cheddar

Instructions

  1. Line a cast-iron pan of any size with low-point tortillas.
  2. I sprayed the pan with olive oil spray before adding the tortillas.
  3. I used four, 1-point tortillas. Blend together eggs and cottage cheese.
  4. I used seven eggs and about 3/4 cup of nonfat cottage cheese.
  5. I also added salt, pepper and a bit of garlic salt. Add veggies or whatever you want on top of the egg mixture.
  6. I used frozen peppers and onions that I first softened in a frying pan. I also added a fistful of fresh spinach that I chopped and then wilted in the pan with the onions and peppers.
  7. I put a whole bag, 1 and 1/4 cup, of nonfat, shredded, Kraft cheddar cheese on the top— 3 points for the cheese.
  8. I put the whole thing in the oven at 350° for 20 minutes. All the videos say to use the jiggle test. So I wiggled it a little little and it seemed very stable after 20 minutes. I let it cool a bit and then cut it into four pieces.

    When you say “blend,” do you mean mix by hand, or put in a food processor?
