If you prefer thicker soups, add 1 cup of rinsed quinoa right before you add the broth. The quinoa will help thicken the soup and add a dose of gluten-free protein and fiber.
Ingredients
- 1 small, diced red onion
- 2 ribs of celery, diced
- 2 medium carrots, diced
- 2 tsp minced garlic (jarred is fine, fresh is better)
- 2 tbsp tomato paste
- 1 small, peeled and diced uncooked sweet potato
- 1 cup canned yellow corn
- 1 small, diced uncooked zucchini
- 6 cups vegetable broth
- 1 small, juiced lemon (or half a large one)
- 2 tbsp fresh, chopped basil (for garnish)

Instructions
- To make in a slow cooker, heat cooking spray in a skillet. Add onion, celery, and carrot. Cook, stirring often, 3 minutes and then spoon into slow cooker.
- Stir garlic, tomato paste, sweet potato, corn, zucchini and broth into slow cooker.
- Cover and cook for 6 hours on low or 2 1/2 hours on high. Remove lid and stir in lemon juice. Serve garnished with basil. Serving size: 1/6th of soup

The soup looks delicious and I love soup 12 months a year. It’s a great way of filling up on veggies and with 0 points, even if you sprinkle a teaspoon of Parmesan on top, it’s still a very low point lunch. ‘m a little confused however …I’m seeing green peas in your picture and I’m not seeing any peas in your recipe. Am I missing something? Thanks!
