Weight Watchers Low Point French Toast Bake

This Weight Watchers Low Point French Toast Bake is 2-4 points per serving depending on version and size of serving.
Makes 3-4 servings.

Weight Watchers Low Point French Toast Bake

Weight Watchers Low Point French Toast Bake

Ingredients 

  • 7 pieces 1 pt. keto bread (I like Arnold’s brand)
  • 1-2 large bananas (2nd banana is for filling)
  • 2 eggs
  • 1 plain Greek yogurt or 1- “two good” vanilla yogurt (any no sugar added Greek yogurt)

Instructions 

  1. Preheat oven to 350 degrees.
    Prepare a non-stick loaf pan with non-stick cooking spray and line with parchment paper, (if desired) for easy removal from pan.
  2. In a bowl, mash 1 banana until smooth. Add the eggs and yogurt. If desired, (optional) add any sweetener (such as truvia, stevia or monk fruit).
  3. Layer bread slices in bottom of pan, making an even base. 2 slices should cover the center, plus 1 slice cut into pieces to fill any gaps on sides.
  4. Pour 1/3 mixture over bottom layer of bread. Layer with additional sliced banana or other fruit, if desired.
  5. Place another layer of bread and 1/3 of mixture on top and repeat for final layer, adding remaining egg mixture on top and spreading evenly.

Optional topping:
1 teaspoon Truvia Brown sugar (optional)
1 tablespoons rolled oats
1/2 teaspoon cinnamon

Sprinkle topping on French toast if using. Bake for 27-30 minutes. Let cool slightly, slice into 3-4 servings (3 pts each for 3 servings) and serve. Refrigerate leftovers in sealed container to reheat.

Variations:
Fall pumpkin spice version- substitute canned pumpkin for the banana- approximately 1/2 cup and add 1 teaspoon pumpkin spice or cinnamon to the egg mixture.

Berry filled- substitute the additional sliced banana with mixed berries in between layers.

Nutty Banana Bread version- follow the original recipe, but add nuts instead of oats and sprinkle a tablespoon between layers. This will add points.

Berry Cheesecake French toast- Substitute a cup of blended non-fat cottage cheese for the yogurt and add berries between the layers.

The possibilities are endless with different spices, fruits, and nuts or other toppings. Serve with sugar free maple syrup and/or fat free whipped cream, if desired.
