I am definitely going to be using different vegetables This would work well with so many varieties too! And, I didn’t even blend it. It melts easily and is so good. I’m thinking of all the other combos I can make now.
I made it for lunch today after seeing her post and thoroughly enjoyed every bite! Shout out to Julie her air Fried cottage cheese idea!
This is such a warming, satisfying lunch on a cold winter day or a fun brunch for when you can sleep in and kick your feet up by the fireplace. Honestly you don’t taste the cottage cheese so try fat-free to save calories.
Ingredients
- 1 slice Royo bread (a whopping 20g of fiber)
- 1 cup fat free cottage cheese
- 1/2 cup sliced cherry tomatoes
- 1/2 cup arugula
- everything bagel seasoning
Instructions
- Evenly spread the cottage cheese over piece of bread and throw in the air fryer for 4 to5 mins
- Top with everything bagel seasoning and vegetables and put back in the air fryer for two more minutes and it comes out all warm, melted, toasted and delicious 🤤
