This easy and flavorful garbanzo black bean salad offers loads of refreshing crunch and texture. It is an easy make-ahead salad that stores nicely in the fridge and can be eaten on its own or as a side dish.

Oh, and it makes a fantastic take-to-work lunch.
This is zero weight watchers points. It holds up well for up to two days and gives you a generous two cups on which to nosh. It’s an easy no-cook recipe is a great make-ahead side dish. Its chock full of fresh veggies and creamy beans, to me, is almost an ideal meal.
Ingredients
- 2 cans black beans
- 1 can garbanzo beans drained (I often soak and cook from dry)
- 1 cup frozen corn
- 1/2 cup chopped onion
- 1/2 cup red peppers
- 1/2 cup yellow peppers
- 1 finely chopped small bunch of cilantro
- 1 tsp cumin
- 1/2 cup lime juice
- 1/2 cup salsa of your choice (if you like a little kick, go for medium)
- 1 tsp minced garlic
Instructions
Ddd all the ingredients to a big bowl and mix! It’s that easy.
