French Toast Topped with Apple Pie Filling

I meal-prepped French Toast Topped with Apple Pie Filling today, and OMG it was delicious!
It has just 2 Weight Watchers points for a one-piece with a hearty serving of apple pie filling.

French Toast Topped with Apple Pie Filling

These French toast pieces are good enough to eat as-is, but also amazing with some apple pie filling. The recipe makes 2 servings. I serve one piece of French toast with half of the apple pie filling.

I also add fat-free sugar-free whipped cream for zero points. Keep in mind, I use Sara Lee 45-calorie bread (the whole loaf!), a dozen eggs and a whole Premier Protein shake.

Ingredients

  • Cooking spray
  • Premier Protein shake of your choice (the Cake Batter flavor is particularly good here)
  • 12 large eggs
  • I loaf of sliced Sara Lee 45 Reduced-calorie bread
  • 3 whole medium apple (Fuji preferred) peeled, cut into 1/4-inch cubes
  • 2 tablespoons of packed light brown sugar
  • Fresh lemon juice (I used about 1 tablespoon)
  • 1/4 teaspoon of fresh lemon zest
  • 1 teaspoon ground cinnamon
  • Ground nutmeg (just a dash)
  • 1 tablespoons of apple sauce or apple jelly

Instructions

  1. In a large, shallow dish, combine eggs premier protein whisk until well blended.
  2. Dip each slice of the bread into the egg mixture, turning several times to coat.
  3. Coat a large griddle or nonstick skillet with cooking spray. Heat the griddle or pan over medium heat.
  4. Add the bread slices to your cast iron skillet (or nonstick cookware), cooking in batches if necessary. Cook, turning once, until golden brown, 2 to 3 minutes per side.
  5. Meanwhile, in a small bowl, prepare the apple pie filling.

Serving size: 1 piece of French toast with half apple pie filling is two weight watchers points. add fat free sugar free whipped cream for zero points
