Luscious Lemon Squares

When I think back to my childhood I always remmber the sweet taste of the lemon squares my Aunt Rita used to make. I do miss her but all the sweetness of her spirit and her good nature seem to be encapsulated in these Luscious Lemon Squares!

These lemon squares have the perfect sweet to tart lemon ratio in each lovingly prepared square.

Although I rarely bake, the holidays have my mind drifting back to time spent with my Aunt Rita in her kitchen licking batter staright out of the bowl and patiently waiting for her great tasting squares to cool!

 I thought now is as good a time as anyrecereate the lemon magic with my own kids and how via these Luscious lemon squares I can illustrate my love for them. Believe me when I tell you these are baked with love!

The good news is that they are really not hard at all to prepare. In fact they are basically amade with just 5 ingredients and take 15 minutes to prepare and 40 minutes of baking in two parts.

And after one hour you have a sweet treat that your kids will always remember and your entire family will really enjoy.

Ingredients:

  • 1 cup butter, softened
  • 2 cups white sugar
  • 2 ¼ cups all-purpose flour
  • 4 egg
  • 3 lemons 

Directions:

  • Step 1 Preheat oven to 350 degrees F (175 degrees C).
  • Step 2 In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9×13 inch pan.
  • Step 3 Bake for 15 to 20 minutes in the preheated oven, or until firm and golden.
  • Step 4 In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
  • Step 5 Bake for an additional 20 minutes in the preheated oven. The Luscious Lemon Squares will firm up as they cool.
  • Step 6  Dust with confectioner’s sugar
