Sweet potatoes stuffed with spinach, red pepper and chick peas.

This Sweet potato stuffed with spinach, red pepper and chick peas is the perfect recipe! Healthy and if you follow weight watchers LOW IN POINTS!

Sweet potatoes stuffed with spinach, red pepper and chick peas.

Sweet potatoes stuffed with spinach, red pepper and chick peas.

ingredients and instructions 
2 cans chick peas. Rinse well & roast in olive oil coated pan at 400° until slightly brown.

Cook four sweet potatoes in the microwave for about eight minutes. Let cool a bit. Cut in half and shell out the insides. Reserve aside in a bowl.

Chop a whole red pepper. Cook in a pan with a little olive oil and some minced garlic. Add an entire bag of fresh baby spinach. Cook through.

combine the spinach and pepper mixture into the sweet potatoes.

Stuff the sweet potato shells with the spinach mixture. Carefully top with the roasted chickpeas. Season with some sea salt, black pepper and crushed red pepper, if desired. I added some goat cheese onto a few. Bake in the oven for about 15 minutes at 375°. Enjoy!

If you follow weight watchers each serving  is five points for me. I know some people have sweet potatoes as “a free“ food, but I don’t. Same for chickpeas/garbanzo beans.

Each serving was a half of a potato stuffed with the red peppers, spinach and scooped out potato. I’m going to say that’s three points after researching. The chickpeas… Two points.
