Coarse chopped onion & celery in tuna with some garbanzo beans & a weighed out dollop of Greek yogurt with romaine hearts instead of making a sandwich. Half an English cucumber to accompany
I had pulled the cucumber, garbanzo beans, & lettuce from the fridge and was gonna make a little salad to go with the sandwich but decided to switch it up and skip the bread. So in they went! Ideal for a quick lunch or dinner, this classic dish is ready in just 10 minutes. We’ve used only a little Greek yogurt here—just enough to hold the tuna salad together—so that the flavor of the other ingredients can shine.
Use the largest, outer leaves from the head of lettuce, and make sure the leaves are not torn or the filling could fall out.
This meal is easy to take on the go too. Just pack the tuna salad in a separate container from the lettuce leaves to keep them fresh and crisp, and then fill them when you are ready to eat.
Ingredients
- 3 ounces ,drained canned chunk white tuna in water
- 2 tbsp chopped celery
- 2 tbsp chopped red onion
- 1 tbsp Greek yogurt
- Pinch of table salt (or the salt you like best)
- 1 pinch of freshly ground black pepper
- 1 leaves of crunchy Boston lettuce
- ⅛ item fresh lemon
- 1/2 can garbanzo beans
- 1/2 English cucumber

Instructions
- Combine tuna, garbanzo beans, onion, celery , and Greek yogurt in a small bowl; season with salt and pepper.
- Divide tuna salad among lettuce leaves; add cucumber and squeeze lemon juice over top.
Makes 1 serving (2 filled leaves).
