So of course I was thrilled when she graciously allowed me to share her recipe which looks as good as it tastes! keep reading for her recipe for Skinny Dark Chocolate Banana Muffins – Two points Each on Weight Watchers Green
Ingredients And Directions:
3 overripe bananas
2 Tbl liquid egg whites
4 TBL Truvia
2 Tbl Sukrin Gold Brown Sugar
1 Tsp Vanilla
Preheat Oven to 350 degrees and line a 12-cup muffin tin with liners or spray with cooking spray
Mix above ingredients in a bowl.
1- 1/4 cups self rising flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
2-3 Tbl dark cocoa powder
Add Wet ingredients in bowl and mix until just combined.
1/4 cup Non fat Greek yogurt.
Fold yogurt into batter, adding more if needed.
Add 8-10 Lily’s dark chocolate chips for extra chocolatey goodness and for zero but they have to be those Lily’s chips chips because regular chocolate chips will have points.
Distribute batter evenly among muffin cups.
Bake 12-14 minutes or until toothpick inserted comes out clean.
Cool completely and store in the fridge.

Want a donut instead? Put the batter in a gallon baggie, snip the end and pipe into donut pans sprayed with cooking spray. Bake as directed in video. I forgot to mention in this video that the oven is set at 350° Then make icing with Sukrin icing adding either water or vanilla extract to desired consistency. Frost donuts. This recipe looks great! Just a couple of questions. The recipe calls for self-rising flour AND baking powder. Doesn’t self-rising flour already have baking powder in it? If I want to use all-purpose flour, would I add two (2) teaspoons of baking powder? I want to make these, but don’t want to mess it up!
